Coffee Cake Recipe

Open Spaces Editors

When berries are in season, they make a flavorful substitution for nuts in the topping. Blueberries are our favorite!

Topping Ingredients

1/4 cup sugar
1 Tablespoon cinnamon
1/2 cup chopped nuts or fresh berries

Cake Ingredients

1 cup butter
1 cup sugar
2 cups pre-sifted flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
2 eggs
1 teaspoon vanilla
1 cup sour cream

Directions

Preheat oven to 350°F. Grease a tube pan and set aside.

Mix topping ingredients together and set aside.

Prepare cake batter: cream butter and sugar together until light and fluffy. Sift dry ingredients together and add to butter mixture. Add eggs, vanilla, and sour cream.

Pour half the batter into a greased tube pan. Sprinkle with half the topping mixture. Pour in the rest of the batter and sprinkle with remaining topping mixture.

Bake at 350 degrees for about 40-45 minutes. Enjoy!
