Simple Cheese Soufflé Recipe

Kids like to watch the soufflé rise, and anything with cheese in it…enough said!

Ingredients

2 Tablespoons butter
2 Tablespoons flour
1/4 teaspoon salt
Black pepper to taste
Cayenne pepper to taste
1/4 teaspoon mustard
2/3 cup milk
2/3 cup sharp cheddar cheese
2 egg yolks, well beaten
2 egg whites
1/4 teaspoon cream of tartar

Directions

Heat oven to 350°F.

Melt butter over low heat and blend in flour and seasonings, stirring until mixture is smooth and bubbly.

Remove from heat; stir in milk. Return pan to heat and bring to a boil, stirring constantly.

Boil 1 minute. Stir in cheese. Remove from heat and stir in egg yolks.

Beat egg whites and cream of tartar until stiff. Fold into cheese mixture and pour into an ungreased 1-quart baking dish. (For a “High Hat” soufflé, make a groove in the mixture 1″ from the edge of the dish.)

Set baking dish in pan filled with 1″ of hot water. Bake 50 to 55 min. until puffed and golden brown.
