Simple Chicken or Shrimp Curry Recipe

Ingredients

1/4 cup butter
1/2 cup chopped onions
1 Tablespoon curry powder
1/4 cup flour
1 and 1/2 teaspoons salt
1 and 1/2 teaspoons sugar
1/2 teaspoon ground ginger
2 cups chicken broth
2 cups milk
4 cups cleaned, cooked shrimp
or cooked, cut-up chicken
1 tsp. lemon juice
Cooked rice
Optional condiments: raisins, peanuts, sautéed onion rings, jam, chutney, toasted coconut

Directions

In a large pot, melt butter and sauté onions and curry powder. Whisk in flour and seasonings. Cook over medium heat, stirring constantly until mixture is thickened and smooth. Remove from heat.

Gradually stir in chicken broth and milk. Return to heat and bring to a boil, stirring constantly. Boil and stir for 1 minute until thickened.

Add shrimp or chicken and lemon juice, stirring gently to combine.

Serve over rice with condiments. Makes approximately six servings.
